Grilled Pork Chops With Cherry Relish Recipe

Ingredients

  • 4 x pork loin chops abt 1/2" thick
  • 1/4 c. low-sodium soy sauce
  • 1 tsp vegetable oil
  • 1/2 c. minced onion
  • 1 Tbsp. minced peeled fresh ginger
  • 1 tsp chopped garlic
  • 1 c. coarsely-minced pitted sweet cherries

Directions

  1. Season pork lightly with pepper. Place in shallow baking dish. Pour soy sauce over. Turn chops to coat. Cover; refrigerate1 hour, turning occasionally.
  2. Heat oil in small skillet over medium heat. Add in onion, ginger and garlic; saute/fry till onion is almost tender, about 5 min. Add in cherries; saute/fry till cherries begin to soften, about 8 min. Remove from heat. Season with salt.
  3. Prepare barbecue for medium-high heat. Remove pork from marinade. Grill pork till cooked through, about 4 min per side. Transfer to plates. Spoon relish over.
  4. This recipe yields 4 servings.
  5. Comments: The relish is also a delicious complement to grilled lamb or possibly chicken.
