Ingredients

  • 1 tsp Vegetable oil
  • 1 c. Thinly sliced onion
  • 2 x Chopped garlic cloves
  • 10 c. Washed, trimmed and coarsely minced greens (try kale, collard, mustard or possibly turnip)
  • 3 c. Low-sodium chicken broth or possibly Ham Broth (see recipe)
  • 1 tsp Granulated sugar
  • 1 tsp Cider vinegar
  • 1 pch Grnd red pepper (optional)

Directions

  1. 1. Place large, deep nonstick skillet or possibly saucepan over medium heat 30 seconds. Add in oil; heat 30 seconds. Add in onion and saute/fry till wilted, about 5 min. Add in garlic; cook 1 minute longer.
  2. 2. Add in greens and toss till slightly wilted, 1-2 min. Add in broth, sugar, vinegar and grnd red pepper, if using; bring to a boil. Reduce heat to low, cover and simmer till tender, about 10 min. Divide greens and broth ("pot liquor") proportionately into 4 serving bowls.
