Directions

  1. Remove thick centre stem of each collard green leaf. Cut the leaves into 3/4 inch strips. Blanch leaves in salted, boiling water for about 5 min.
  2. Sweat the diced carrot, celery and leek in vegetable oil till tender.
  3. Add in the rest of the ingredients. Simmer for about 11/2 hrs or possibly till the meat falls apart and the liquid is reduced to a glaze. Extra liquid may need to be added. Water can be used if you don't have any more stock.
