Ingredients
- 1 bn collard greens
- 1 x carrot, medium, dice
- 2 stalk celery, medium, dice
- 1 x leek, white part only
- 1 Tbsp. vegetable oil
- 8 c. chicken stock
- 6 ounce smoked turkey, thigh
- 2 Tbsp. brown sugar chili, flakes, to taste salt, to taste
Directions
- Remove thick centre stem of each collard green leaf. Cut the leaves into 3/4 inch strips. Blanch leaves in salted, boiling water for about 5 min.
- Sweat the diced carrot, celery and leek in vegetable oil till tender.
- Add in the rest of the ingredients. Simmer for about 11/2 hrs or possibly till the meat falls apart and the liquid is reduced to a glaze. Extra liquid may need to be added. Water can be used if you don't have any more stock.
