  • 2 Tbsp. sugar
  • 3/4 tsp salt
  • 3 x Large eggs lightly beaten
  • 3/4 c. lowfat milk
  • 3/4 c. lowfat sour cream
  • 1 1/2 c. flour divided

Directions

  1. Add in sugar and salt to a medium bowl. Whisk in beaten Large eggs. Add in lowfat milk and lowfat sour cream and stir till well combined. Add in flour, beginning with 1 c., then in small increments till consistency is of a thin pancake batter.
  2. Preheat a large nonstick skillet over medium heat. Spray with vegetable cooking spray. Pour a 5- to 6-inch circle of batter into center of skillet. Rotate quickly till batter completely covers pan. When bottom is golden, flip and cook on second side for 30 to 60 seconds; remove from pan.
  3. Repeat process till batter is gone. Serve with butter and cinnamon sugar, if you like. Roll up and enjoy!

  5. Comments: This is a Norwegian recipe for pancakes from my great aunt. She used to make 20 to 30 of them at a time and I recently found my way to creating a fairly close version of hers
