  • 1 to 2 pans of cornbread (cooked in iron skillet using yellow meal)
  • 1 to 2 onions (round, minced)
  • 1 large bell pepper, seeded and minced
  • 1 c. minced celery
  • 1 bunch green onions, minced
  • 1/2 pound bacon (fried slowly till crisp, reserve bacon and fat separately)
  • 3 c. cooked rice
  • 6 boiled Large eggs
  • 4 raw Large eggs, slightly beaten
  • 1/2 to 1 gallon chicken broth
  • Salt and pepper

Directions

  1. Crumble cornbread and rice into large roaster pan. Set aside. Saute/fry onion, celery, green onions, and bell pepper in 1/2 c. of reserved bacon fat. add in to cornbread mix. Chop boiled Large eggs and add in to mix. Crumble crisp bacon and add in to mix. Salt and pepper as desired. Pour sufficient chicken broth into mix to make a thick pouring consistency. Stir in beaten Large eggs. Bake at 350 degrees for 2 to 3 hrs. Chicken or possibly turkey pcs may be added. Sage may be added. Poultry seasoning may be added.
