gourmet pizza sauce using epicure Recipe

This gourmet pizza sauce is so full of flavour, you may skip the toppings altogether!
Opening up one can of diced tomatoes to make Epicure's Salsa leaves me with just over a half of the can left along with the juice so I generally try to come up with other recipes where I can use the other half. When I make the salsa I drain off one cup of the tomatoes for my salsa and I add half a chopped onion & half chopped pepper (what every colour I have in the fridge) With the other half I might make a sauce to go over pre-breaded chicken burgers or spaghetti sauce. I came up with the following recipe after I had made up the one cup of salsa and it was in the fridge for a couple of days so wanted to use it up. hope you enjoy

If you have one of Epicure's spaghetti dry herbs maybe try adding 1 tsp to start and due taste test until you get the taste your looking for or use the sun-dried tomatoe cheese ball mix or it really is very simple and versatile recipe
NOTE this was not spicy at all if you omit the extra red pepper flakes & cayenne pepper but we love spicy!

  • 1 cup of Epicures Poco Picante Salsa (as per my made up

  • 1 (6 ounce) can tomato paste
  • 3 tablespoons grated Parmesan cheese
  • 1 minced garlic clove or you can use one tsp of any of the garlic spices epicure uses (I used fresh garlic clove for this but will like to try it with the new Epicure Roasted Garlic Aioli maybe starting with half tsp
  • 1 tablespoons honey
  • 1/4 teaspoon dried oregano (dried from my garden)
  • 1/4 teaspoon dried basil (dried from my garden)
  • 1/4 teaspoon ground black pepper or Epicures garlic pepper (I used both)
  • 1/8 teaspoon cayenne pepper (omit if you want a milder flavour)
  • pinch of red pepper flakes (omit if you want a milder flavour)

Directions

  2. 1. In a small pot, combine salsa, tomato paste, Parmesan cheese, garlic, honey, oregano, basil, ground black pepper, cayenne pepper, red pepper flakes and salt; mix together, breaking up any clumps of cheese.
  3. 2. Let sauce sit for 30 minutes to blend flavours; spread over pizza dough and prepare pizza as desired.
