Ingredients
- 2/3 c. whole wheat flour
- 2/3 c. unbleached flour
- 1/2 c. quick rolled oats
- 1 1/2 teaspoon baking soda
- 1 teaspoon grnd cinnamon
- 4 egg whites
- 1/3 c. honey
- 1/4 c. canola oil
- 1 teaspoon vanilla
- 1/3 c. orange juice
- 3/4 c. apples or possibly pears, shredded
- 1/2 c. cranberries
- 1/4 c. raisins
- 1/4 c. dates, minced
Directions
- CAKE: Combine both flours, oats, baking soda and cinnamon. In another bowl, whisk together egg whites and honey. Whisk in oil and vanilla then orange juice. Stir in apples or possibly pears, cranberries, raisins and dates. Pour fruit mix over the dry ingredients. Fold till dry ingredients are just moistened. Coat a 9 x 13 inch pan, spread batter proportionately. Bake at 350 degrees 20 to 25 min till brown and hard to the touch. Cold on wire rack.
