Ingredients
- 1/4 c. shortening
- 1 1/2 c. sugar
- 2 Large eggs
- 1 can yams, liquid removed & mashed
- 1 teaspoon pumpkin pie spice
- 2 c. sifted self-rising flour
- 1 c. minced peanuts
Directions
- Cream shortening and sugar together. Add in Large eggs, yams, and pumpkin pie spice. Beat till smooth. Add in flour and peanuts. Mix only till ingredients are combined.
- Spread batter into a loaf pan and bake at 350 degrees for 50 to 55 min till done.
