  • 1 lb boneless, skinless Chicken Breasts, cut into 1 inch cubes
  • 2 Tbsp. fresh Ginger, grated Salt to taste
  • 1 tsp Brown Sugar, firmly packed
  • 2 Tbsp. Vegetable Oil
  • 1/2 c. fresh Mushrooms, sliced
  • 1/4 c. Dry Dates, sliced and pitted
  • 1/3 c. Scallions or possibly Green Onions, sliced with the green stems
  • 4 pt Chicken Broth
  • 3 Tbsp. Whiskey or possibly Rum

Directions

  1. Rub the diced chicken with the fresh ginger, salt, and brown sugar. Let the poultry marinate for 24 hrs.
  2. Hot the oil in a soup pot over medium-high heat, and saute/fry the marinated chicken, mushrooms, dates, and scallions. Add in the chicken broth to the pot and bring the mix to a boil. Cover, reduce the heat, and simmer for about 20 min.
  3. Add in the whiskey or possibly rum to the concoction. Adjust the salt and pepper, and serve hot.
