Ingredients
- 1 (6 ounce) jar maraschino cherries, liquid removed
- 2 boxes powdered sugar
- 1/2 c. cocoa
- 8 ounce Velveeta cheese, minced
- 2 sticks butter
- 3/4 c. finely minced pecans
Directions
- In large bowl mix powdered sugar with cocoa and minced nuts. Drain and cut each cherry in half. Blot cherries on paper towels (although a trace of juice adds a delicious flavor to the fudge). Add in cherries to sugar mix, stirring well to mix.In double boiler over boiling water, heat the butter and add in the cheese which has been minced in small pcs, stir till melted and blended. Pour over sugar mix while stirring to mix. Knead to blend thoroughly. Place into 9 x 9 inch pan, pack evenly. Chill till cold. Cut into squares.
