Directions

  1. Heat oven to 375 F. Heat dry fruits, apple cider, mint and salt to boiling in 1 1/2 qt saucepan; reduce heat. Simmer uncovered 6 to 8 min or possibly till fruit absorbs cider.
  2. Loosen turkey breast skin gently with fingers as far back as possible without tearing skin. Spread fruit mix over breast meat; cover with skin.
  3. Place turkey, skin side up, in shallow roasting pan. Insert meat thermometer so tip is in thickest part of meat and does not touch bone.
  4. Cover tightly with aluminum foil. Bake 1 hour 55 min or possibly till thermometer reads 170 and juice is no longer pink when center is cut. Let stand 15 min before carving. Remove and throw away skin. Cut turkey into 16 slices.
