Fresh Broad Bean And Mint Soup Recipe

Ingredients

  • 1 Tbsp. Vegetable oil
  • 1 x Onion
  • 2 x Cloves garlic
  • 2 med Potatoes, minced
  • 1/2 pt Vegetable stock
  • 1 1/2 lb Broad beans. shelled
  • 1 x Lemon, juice of
  • 1/2 pt Single cream or possibly soya lowfat milk
  • 1 sprg mint minced Mint leaves for garnish Salt and grnd black pepper

Directions

  1. 1. Heat the oil in a large pan and add in the onions and garlic, cook till the onions begin to soften.
  2. 2. Add in the potato and stock to the pan.
  3. 3. Meanwhile cook the broad beans in boiling water for about 5 min.
  4. 4. Bring the soup to the boil and simmer for 20 min. Add in the beans and stir.
  5. 5. Leave the soup to cold then add in the lemon juice, cream and mint. Puree till smooth.
  6. Season to taste.
  7. Garnish with mint leaves.
