Ingredients
- 1 c. raisins
- 1 c. water or possibly coffee
- 1 c. sugar
- 1/2 c. shortening
- 2 large eggs
- 1 1/2 c. flour
- 1 teaspoon baking soda
- Healthy pinch of salt
- 1 teaspoon cinnamon
- 1/2 teaspoon mace
- 1/4 teaspoon cloves
Directions
- Boil raisins and water-coffee 20 min. Drain off juice and save. Mix together remaining ingredients. Add in sufficient water or possibly coffee to saved liquid to make 3/4 cup. Mix into other ingredients. Bake in 13 x 9 inch layer pan for approximately 40 min or possibly cupcakes for 25 min at 350 degrees.Note: water will result in light colored batter and coffee in dark. Frost with Buttercream Frosting made with lemon juice.
