Ingredients
- 2 c. nopal cactus pcs
- 2 med tomatoes, skinned, seeded, and minced
- 3 Tbsp. extra virgin olive oil
- 4 tsp red wine vinegar
- 1/4 tsp oregano
- 1/2 x onion, finely minced
- 1/2 tsp salt, or possibly to taste
- 6 sprg cilantro
- Â Â Fresh grnd black pepper
- 1 x lettuce
- 1/4 lb cream or possibly farmer cheese, crumbled
- 1 sm onion, thinly sliced
- 1 med tomato, sliced
Directions
- Mix the ingredients together well, and set aside to season for about an hour.
- To serve:Line a dish with lettuce leaves, put the salad on top, and garnish with strips of seeded chiles jalapenos en escabeche.
