Looking for a way to use up all those eggs you dyed? This is the perfect recipe, using two family favorite sandwiches. . . . . egg salad and a BLT.

  • 4 hard boiled eggs, chopped
  • 4 tablespoons mayonnaise
  • 1 tablespoon yellow mustard
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 dill pickle chopped (2 tablespoons)
  • 4 slices bacon, cooked crisp
  • 4 slices of bread, toasted
  • 4 slices tomato
  • lettuce leaves

Directions

  1. Combine the first 6 ingredients in a bowl. Mix well. Spread the egg salad evenly to make two sandwiches, top with bacon, tomato and lettuce. Makes 2 sandwiches.
