Easy Fudge Truffle Cheesecake Recipe

Ingredients

  • Chocolate Crumb Crust (recipes follow)
  • 2 c. (a 12ounce package) semi-sweet chocolate chips
  • 3 pkt (8-oz)s each) cream cheese, softened
  • 1 x (14-oz) can sweetened condensed lowfat milk (such as Eagle Brand) (NOT evaporated lowfat milk)
  • 4 x Large eggs
  • 2 tsp vanilla extract

Directions

  1. Heat oven to 300 degrees. Prepare Chocolate Crumb Crust; set aside. In a heavy pan, over very low heat, heat chocolate, stirring constantly. In large mixer bowl, beat cheese till fluffy. Gradually beat in sweetened condensed lowfat milk till smooth. Add in melted chocolate and remaining ingredients, mix well. Pour into prepared pan. Bake 1 hour and 5 min or possibly till center is set. Cold; chill. Chill leftovers.
  2. Chocolate Crumb Crust: In medium bowl, combine 1 1/2 c. crushed vanilla wafers, 1/2 c. powdered sugar, 1/2 c. cocoa and 1/3 c. melted butter. Press firmly on bottom of 9 inch spring form pan. Or possibly Combine 1 1/2 c. crushed chocolate wafers with 1/3 c. melted butter and press firmly on bottom of 9 inch spring formpan.
