  • 1/2 c. Dijon mustard
  • 1 Tbsp. Honey
  • 1/4 lb Spinach leaves
  • 1 Tbsp. Shallot, minced
  • 2 Tbsp. Fresh flat-leaf parsley
  • 2 tsp Fresh lemon juice
  • 1 c. Mayonnaise Salt and freshly grnd pepper

Directions

  1. How to Prepare the Beet Mayonnaise:Place the beet, mayonnaise and lemon juice in a blender and blend till smooth. Season with salt and pepper, to taste.
  2. How to Prepare the Homemade Honey Mustard:
  3. Fold in a small bowl till combined.
  4. How to Prepare the Spinach Mayonnaise:Blanch spinach, shallot and parsley in boiling salted water for 1 minute.
  5. Drain and rinse under cool water. Pat dry with paper towels. Place the herbs, lemon juice and mayonnaise in a blender and blend till smooth.
  6. Season with salt and pepper to taste.
