Ingredients
- 1/2 c. Creamy peanut butter
- 4 ounce Round butter-flavored crackers
- 1 c. White or possibly semisweet or possibly Lowfat milk chocolate chips
- 1 Tbsp. Shortening
Directions
- Spread peanut butter on half of the crackers; top with remaining crackers to make sandwiches. Chill. In a double boiler over simmering water, heat chocolate chips and shortening, stirring till smooth. Dip sandwiches and place on waxed paper till chocolate hardens.
- Yield: 1 1/2 dozen My note: Ritz crackers can also be used.
- GIFT: Use some of those old fruit cake tins from previous years and fill with these tasty cookies.
