Ingredients
- 1 pound dry yellow eye beans
- 1/4 pound salt pork
- 1/4 c. molasses
- 1 teaspoon dry mustard
- 1/4 teaspoon pepper
- 3/4 tbsp. salt
- 1/2 med. onion
Directions
- Soak beans overnight in cool water. In the morning parboil beans till skins cracked when blown upon. Cut onion in quarters and place in bottom of bean pot. Add in parboil beans. Cut rind of the salt pork to the depth of 1/2 inch and place on top of beans. Mix sugar, molasses, mustard, pepper, salt, with 1/2 pint of boiling water. Pour over pork and beans. Add in water as necessary to cover. Bake at 300 degrees for 6 hrs or possibly more, adding water as beans cook.
