  • 1 1/2 c. lowfat vanilla yogurt
  • 1 (20 ounce.) can crushed pineapple in juice
  • 1 teaspoon unflavored gelatin
  • 1 teaspoon coconut extract
  • 6 pkg. Sweet One (granulated sugar substitute)
  • 2 (11 ounce.) cans mandarin oranges in extra light syrup, liquid removed
  • 3 tbsp. finely minced dates
  • 2 tbsp. minced walnuts
  • 3-4 fresh strawberries for garnish

Directions

  1. Place yogurt in colander lined with cheesecloth, paper coffee filter, or possibly paper towel. Set over a bowl and drain 1 hour.
  2. Meanwhile, drain pineapple, reserving juice. Place 1/4 c. reserved juice in small saucepan; sprinkle gelatin over juice to soften. Over low heat, cook till gelatin dissolves completely. Pour into a medium sized bowl. Add in remaining juice, coconut extract and Sweet One. Chill 20 to 30 min or possibly till mix begins to gel. Stir in liquid removed yogurt.
  3. In large serving bowl, toss crushed pineapple, mandarin oranges, and dates. Sprinkle with walnuts. Gently spoon gelatin mix on top. Chill 30 min. Garnish with fresh strawberries.
