  • 1 lb Pickled okra
  • 2 x Large eggs
  • 1/2 c. Lowfat milk
  • 1 tsp Warm pepper sauce
  • 1/2 c. White flour
  • 1/2 c. Yellow cornmeal Peanut oil for frying

Directions

  1. PREPARATION: Drain okra. Beat Large eggs, lowfat milk, and warm red pepper sauce together till well blended. Dredge okra in flour, dip into egg mix, and then dredge in yellow cornmeal. Put breaded okra on a baking sheet.
  2. Recipe can be made to this point several hrs ahead.
  3. COOKING AND SERVING: In a deep-fryer or possibly large, heavy pot, heat about 4 inches of peanut oil to 375 F. Carefully lower okra into warm oil in batches. Cook till golden, about 2 min. Drain on paper towels and serve hot.
  4. NOTES : A spicy side dish for roasts. Pickled okra is a staple of the Southern pantry. You can buy it in jars at most supermarkets.
