Directions

  1. Cook rice to package directions. Transfer to large bowl; fluff with fork and let cold. Add in chicken, bell pepper, olives, green onion, artichoke hearts, and half of marinade and toss lightly.
  2. Mix mayonnaise, curry pwdr, and remaining marinade in small bowl. Pour over salad and toss again. Add in salt and pepper to taste; chill till ready to serve. Arrange salad on lettuce leaves. Garnish with cherry tomatoes. Serves 6.
