Ingredients
- 1 x clove garlic chopped
- 1/2 c. minced onion
- 3 Tbsp. extra virgin olive oil
- 1/2 tsp salt
- 1/2 tsp turmeric (1/2 to 1)
- 1/4 tsp cumin (1/4 to 1/2)
- 1/2 tsp red pepper flakes (optional)
- 3 x zucchini sliced (about 3 c.)
- 2 x tomatoes minced
Directions
- You can use this basic recipe for any vegatable.
- In a large skillet, saute/fry garlic and onion in extra virgin olive oil till soft. Add in salt, turmeric, cumin, and red peppers. Blend well. Stir in zucchini and cook till tender. Stir in tomatoes and serve.
- Serves 8.
