Ingredients

  • 2 c. coarsely-grated Parmesan cheese (abt 6 ounce)
  • 1 tsp cumin seeds or possibly fennel seeds finely crushed or possibly grnd in spice grinder Nonstick vegetable oil spray

Directions

  1. Mix cheese and cumin in medium bowl. Spray medium nonstick skillet with nonstick spray; heat over medium heat. Sprinkle 3 Tbsp. cheese mix in 4-inch round lace-like pattern over bottom of skillet. Cook till cheese is melted, bubbling and golden, about 4 min. Remove skillet from heat.
  2. Using thin metal spatula, carefully and gradually loosen edges of cheese crisp; gently transfer to paper towels to cold. Repeat with remaining cheese mix, cooking 1 cheese crisp at a time and spraying skillet with nonstick spray before each crisp is cooked. Cold. (Can be made 6 hrs ahead. Store in airtight container at room temperature.) Serve at room temperature.
  3. This recipe yields about 8 crisps.
  4. Comments: Italians call these irresistible treats frico, or possibly "little trifles." Served on their own, they make nice cocktail snacks.
