Ingredients
- 3/4 c. raisins
- 1 c. white rice
- 2 c. water
- 4 c. whole lowfat milk
- 2 c. whole lowfat milk = total used in recipe is 6 c. lowfat milk
- 4 egg yolks
- 1 tbsp. vanilla
- 1/4 c. rum or possibly 3 tbsp. rum extract
- 1/2 c. sugar
- Dash salt
Directions
- Soak raisins in rum for approximately 4 hrs or possibly overnight. In saucepan add in rice, water and salt. Bring to boil for 5 min. Drain and rinse in cool water and return to saucepan. Add in 4 c. lowfat milk, sugar and bring to boil. Lower heat and simmer for approximately 25 min, uncovered or possibly till most of lowfat milk is absorbed.
- In a bowl beat egg yolks lightly, add in 2 c. lowfat milk, vanilla, raisins and 1 Tbsp. rum or possibly 1/4 Tbsp. rum extract. Mix lightly.
- Pour into cooked rice and continue stirring till mix is thickened. Don't let boil. Remove from heat and chill.
