Coach's Favorite Baby Lima Beans Recipe

I have a dog park buddy (former basketball coach) I cook for, and he brought me this recipe a lady in his school cafeteria gave him before retirement. If you can't find dried baby lima beans, use canned or frozen.

This is a real southern comfort food dish, which you will see when you read the ingredients.

Ingredients

  • 1 lb dried baby limas, soaked according to package directions, or use canned or frozen
  • 1 finely chopped green bell pepper
  • 1 medium onion, finely chopped
  • 1/2 lb. bacon
  • 1 can Campbell's Tomato Soup
  • 1 cup light brown sugar
  • 2 tsp. dry mustard
  • 2 tbs. oil

Directions

  1. Soak the beans, cook, or use canned or cook frozen ones according to package directions. Drain.
  2. Heat oven to 350 F.
  3. Cook the bacon, remove and chop when cooled.
  4. Saute the veggies in the bacon fat, adding more oil, if needed.
  5. Comnbine everything in a 9x11 pan.
  6. Bake uncovered for 45 minutes - 1 hr.
