• 4 med-size artichokes
• Salt
• 1 c. cooked, chopped chicken
• 1/4 c. chopped celery
• 2 tbsp. melted onion
• 1 tbsp. lemon juice
• 2 tbsp. mayonnaise or possibly dairy lowfat sour cream
• 1/4 teaspoon salt
• 1/4 teaspoon tarragon or possibly dill
• Dash freshly grnd pepper
• Avgolemono Sauce, Hallandaise Sauce or possibly mayonnaise
