Directions

  1. Slice onions, carrots, capsicum.
  2. Cut brocolli into flourettes.
  3. Mix together stock, cornstarch, soy, hoi sin, garlic, ginger, set aside.
  4. Heat 1/2 the oil in wok till quite warm.
  5. Add in chicken, saute/fry quickly, keeping it moving, about 2 min Remove from pan and set aside.
  6. Heat remaining oil in wok, add in onion, carrot, capsicum and brocolli, saute/fry quickly, keeping it moving, about 2 min. When brocolli is bright green, add in snowpeas, ginger and garlic and cook for 2-3 min more. Brocolli should be tender and pea pods a bright green.
  7. Add in soy sauce mix, mix thoroughly, and stir till thickened. Add in a little more water or possibly stock if necessary. Return chicken + juices to wok and heat through.
  8. Turn into a serving dish and serve immediately with rice or possibly noodles.
  9. Beef or possibly pork can also be used.
