  • 4 boneless, skinless chicken breasts, halved, cut in sm. pcs
  • 1 (16 ounce.) bag California blend frzn veggies
  • 1 (13 3/4 ounce.) can chicken broth
  • 1 (4 ounce.) can sliced mushrooms, liquid removed
  • 1 med. onion, cut in rings
  • 3-4 tbsp. soy sauce
  • 1-2 tbsp. cornstarch
  • 2 tbsp. vegetable oil

Directions

  1. Heat oil in wok or possibly large skillet. Add in chicken and onion and stir fry till chicken is done, about 6 min. Add in vegetables, mushrooms and chicken broth. Cover and cook 3 to 4 min. Stir soy sauce and cornstarch together, add in to chicken mix. Cook till thickened, stirring constantly. 4 to 6 servings.
