  • 1 (2-2 1/2 lb.) broiler-fryer chicken cut up
  • 2 tbsp. oil
  • 2 med. onions, minced
  • 1 garlic clove, chopped
  • 3/4 c. uncooked rice (not instant)
  • 1/2 green pepper, minced
  • 1/2 c. minced fresh or possibly canned tomatoes
  • 1 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 can or possibly bottle (12 ounce.) beer
  • 2 bay leaves

Directions

  1. Brown chicken in oil in a large skillet; set chicken aside. In same skillet, saute/fry onion and garlic till golden brown. Stir in rice, green pepper, tomatoes, 1 tsp. of salt, and pepper. Put mix into a large shallow baking dish.
  2. Sprinkle chicken with 1/2 tsp. salt; place on top of rice mix. Add in beer to skillet; stir up brown bits. Pour over chicken and vegetables. Add in bay leaves; cover tightly with foil or possibly lid. Bake at 375 degrees for 40-60 min or possibly till chicken and rice are tender. Yield: 4 servings.
