Ingredients
- 2 tsp Butter
- 2 tsp Extra virgin olive oil
- 1 x Yellow onion, chopped
- 2 x Garlic cloves, chopped
- 4 c. Homemade or possibly store-bought spaghetti sauce
- 1 c. Cottage cheese
- 1 lb Ricotta cheese
- 1/2 c. Freshly grated parmesan cheese
- 3 Tbsp. Freshly minced parsley
- 3 Tbsp. Freshly minced chives
- 1/4 c. Fresh basil, cut into thin strips
- 2 x Large eggs, beaten
- Â Â Salt & pepper, to taste
- 1 lb Ziti pasta or possibly mostaccioli noodles, cooked and liquid removed
- 1Â 1/2 c. Shredded mozzarella cheese
- 1/2 c. Freshly grated parmesan cheese
Directions
- Heat the butter and oil in a saute/fry pan. Add in the onions and saute/fry over medium heat, stirring often, till tender and slightly golden brown. Then add in the garlic and saute/fry briefly. Add in the tomato sauce and bring to a simmer. Cook for 10 min to blend flavors. Remove from the heat and let cold. In a large mixing bowl, combine the cottage cheese, ricotta, parmesan, parsley, chives, basil and Large eggs. Season with salt & pepper. Stir in three-quarters of the spaghetti sauce mix and mix well. Add in the cooked pasta and the mozzarella cheese and combine.
- Pour the mix into a casserole dish and top with the remaining sauce and parmesan cheese. Cover and bake at 350 for 30 min or possibly till heated through.
- Serves 6 hungry eaters.
