Ingredients

  • 1 x Pre-packaged bag baby spinach leaves, pre-washed
  • 4 ounce Crumbled blue cheese
  • 2 x Granny smith apples - peeled, cored and sliced
  • 1/2 c. Walnuts, tosated
  • 3 Tbsp. Sherry wine vinegar
  • 1 tsp Dijon mustard
  • 1/4 c. Extra virgin olive oil Salt & pepper, to taste

Directions

  1. Place the spinach leaves, cheese, apples and walnuts in a large salad bowl. In a separate bowl whisk together the vinegar and dijon. Slowly add in the oil, whisking constantly. Season the dressing with salt and pepper. Toss the salad with the dressing. Serve immediately.
  2. Serves 4.
