California Shrimp Bowl Recipe

Ingredients

  • 1 1/2 lb Unshelled med. shrimp
  • 1 Tbsp. Pickling spice
  • 2 x Celery tops (or possibly more) Salad greens
  • 2 x Tomatoes, cut in wedges
  • 2 Tbsp. Capers
  • 2 x Hard-cooked Large eggs, sliced
  • 3 Tbsp. Oil & vinegar dressing *

Directions

  1. *Note: Bottled or possibly homemade dressing may be used.
  2. Drop shrimp into boiling salted water to cover and add in pickling spice and celery tops. Bring again to boil and cook, uncovered, 2 to 3 min.
  3. Drain, peel and devein shrimp. Place in bowl, cover tightly and refrigerateseveral hrs. Line serving bowl with greens. Arrange shrimp and tomato wedges in bowl. Sprinkle with capers and garnish with sliced Large eggs. Sprinkle with dressing and serve at once. Pass more dressing, if you like.
