Blueberry Lemon Cheese Squares Recipe

Ingredients

  • 2 c. fresh or possibly frzn blueberries, rinsed
  • 1 Tbsp. granulated sugar
  • 2 Tbsp. fresh lemon juice
  • 1 x zest of 1 lemon, divided
  • 1 box yellow butter or possibly lemon cake mix
  • 4 x Large eggs, divided
  • 1 stk butter or possibly margarine, softened
  • 2 3/4 c. confectioners' sugar
  • 1 x (8 ounce.) cream cheese

Directions

  1. In a bowl, combine blueberries with sugar, lemon juice and half of the lemon zest. Set aside. Mix cake mix with 1 egg, softened butter and the remaining lemon zest. Pat into a buttered and floured 13 x 9 in baking pan. In a mixing bowl with hand-held electric mixer, beat confectioners' sugar with cream cheese and remaining 3 Large eggs till smooth. Gently stir in blueberry mix; pour over cake. Bake in a preheated 3250 oven for about 45 to 55 min, or possibly till browned. Let cold completely; refrigerateand cut into squares.Serve with fresh blueberries and a dusting of confectioners' sugar. Store in refrigerator.
