Calamares Rellenos (Stuffed Squid) Recipe

  • 12 sm Squid
  • 1/2 lb Ham, chopped
  • 6 x Stuffed olives, minced
  • 2 x Tomatoes, peeled and minced
  • 1 Tbsp. Fresh parsley, minced Salt to taste
  • 3 Tbsp. Oil
  • 1 x Onion, minced
  • 2 x Cloves garlic, chopped Flour for dusting Oil for frying

Directions

  1. Clean and wash squid, discarding ink sacks, heads and insides, and peel off skins. Remove tentacles and chop fine. Mix minced tentacles, ham, olives, tomatoes, and parsley. Add in salt to taste.
  2. Stuff squid with the mix and close openings with toothpicks. Heat oil in a skillet and saute/fry onion and garlic until onion is soft. Dust squid with flour and fry with onion and garlic for about 30 min or possibly till golden brown on all sides.
  3. VARIATION: If you want a sauce with your squid, remove the squid to a warming oven. Then add in to the skillet 1/2 c. dry white wine and 2 peeled and finely minced tomatoes. Continue cooking till the liquid is reduced and you have a smooth sauce. Spoon sauce over the stuffed squid.
