Cafeteria Carrot Souffle Recipe

Ingredients

  • 2 lb carrots, minced
  • 1/2 c. melted butter
  • 1 c. white sugar
  • 3 Tbsp. all-purpose flour
  • 1 tsp baking pwdr
  • 1 tsp vanilla extract
  • 3 x Large eggs, beaten
  • 1 tsp confectioners' sugar for dusting

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Bring a large pot of salted water to a boil. Add in carrots and cook till tender, about 15 min. Drain and mash. To the carrots add in melted butter, white sugar, flour, baking pwdr, vanilla extract and Large eggs. Mix well and transfer to a 2 qt casserole dish. Sprinkle with confectioners' sugar. Bake in preheated oven for 30 min.
