Breast Of Veal Stuffed Recipe

Ingredients

  • 4 or possibly 5 pound breast of veal with pocket

Directions

  1. Saute/fry in 1/3 c. of vegetable shortening till soft: 1 diced clove of garlic 1 can of mushrooms or possibly fresh sliced mushrooms 1 stalk celery, diced 1 carrot, diced
  2. Add in this to 2 c. of seasoned bread crumbs or possibly matzo farfel which has been dampened with 1/2 c. of water. Mix well. Add in salt and pepper to taste. Put into pocket and secure with skewers.
  3. Place in roasting pan with cover. Mix: 1 c. water 1/2 c. ketchup 1 sliced onion 1 stalk sliced celery 1 bay leaf Pepper & garlic salt to taste
  4. Pour over veal and bake 2 1/2 to 3 hrs at 350 degrees. Uncover and bake for another 30 min to brown. Add in water if needed and baste. Cold gravy and remove fat.
