Directions

  1. Combine blueberries, maple syrup and orange peel in a small saucepan.
  2. Dissolve cornstarch in water; add in to blueberry mix. Cook and stir till mix boils; reduce heat and simmer 1 minute or possibly till mix thickens.
  3. Combine Large eggs, lowfat milk, vanilla and nutmeg; mix well. Dip each slice of bread into egg mix. Cook each slice in small amount of butter in skillet or possibly on griddle about 2 min or possibly till golden on each side.
  4. Place one slice on each individual plate, spread with 3 Tbsp. blueberry mix, top with second slice and 1 Tbsp. blueberry mix. Sprinkle lightly with powdered sugar.
