Ingredients

  • 2 pound fish, in lg. bite-size pcs, or possibly peeled shrimp, shelled clams or possibly shelled mussels
  • 2 c. flour
  • 1 tbsp. sugar
  • Salt and other spices to taste
  • 2 tbsp. oil
  • 4 egg yolks
  • 4 egg whites, stiffly beaten
  • 1/2c. beer
  • Oil for deep frying

Directions

  1. Prepare fish for cooking. Combine batter ingredients, mixing carefully to keep a light consistency. Heat oil to 350 degrees. Dip fish pcs in batter and drop into warm oil a few pcs at a time. As each piece turns golden, remove to a paper towel lined platter to drain. Serve with tartar sauce (recipe follows) or possibly your favorite salsa.
