Ingredients
- 2 pound fish, in lg. bite-size pcs, or possibly peeled shrimp, shelled clams or possibly shelled mussels
- 2 c. flour
- 1 tbsp. sugar
- Salt and other spices to taste
- 2 tbsp. oil
- 4 egg yolks
- 4 egg whites, stiffly beaten
- 1/2c. beer
- Oil for deep frying
Directions
- Prepare fish for cooking. Combine batter ingredients, mixing carefully to keep a light consistency. Heat oil to 350 degrees. Dip fish pcs in batter and drop into warm oil a few pcs at a time. As each piece turns golden, remove to a paper towel lined platter to drain. Serve with tartar sauce (recipe follows) or possibly your favorite salsa.
