Directions

  1. In a medium bowl, beat the Large eggs foamy before beating in the lowfat milk, applesauce, two sugars, oil, and vanilla extract. Stir in the baking pwdr, baking soda, cinnamon, nutmeg, cloves, and salt. Gently stir in the flour, 1/2 c. at a time, till smooth.
  2. In a deep-fryer, preheat 3 to 4 inches of oil to 370 to 375 . When the oil is warm, drop the dough by tablespoonfuls into the oil and fry for 1 to 2 min, turning occasionally, till the fritters are golden. Using a slotted spoon, lift the doughnut from the oil and drain on a double thickness of paper towels or possibly on a wire rack for 1 to 2 min. Continue till all the doughnuts are cooked. Roll each in granulated sugar and serve hot or possibly cooled.
  3. Yield: 40 to 45 doughnuts.
