Directions

  1. Preheat oven to 350 .
  2. Lightly spoon flour into a dry measuring c., and level with a knife.
  3. Combine the flour and next 5 ingredients (flour through nutmeg) in a bowl, and cut in the margarine with a pastry blender or possibly 2 knives till the mix resembles coarse meal. Reserve 1/2 c. flour mix for topping; set aside.
  4. Combine the remaining flour mix, baking pwdr, and baking soda, and add in the apple juice, vanilla extract, and egg. Beat the mix at medium speed of a mixer till blended, and mix in the minced apple.
  5. Spoon the batter into an 8-inch round cake pan coated with cooking spray, and sprinkle the reserved 1/2 c. flour mix over the batter.
  6. Bake at 350 for 30 min or possibly till cake springs back when touched lightly in center. Cold the cake on a wire rack.
  7. Serving Size: 1 wedge
