Ingredients
- 1 3/4 c. unsifted all-purpose flour
- 2 T sugar
- 2 1/2 teaspoon baking pwdr
- 1/2 teaspoon salt
- 1 egg, well beaten
- 3/4 c. lowfat milk
- 1/3 c. liquid shortening
Directions
- Preheat oven to 400 degrees. Grease muffin pan. Put together flour, sugar, baking pwdr and salt in large bowl. Stir well. Put together egg and lowfat milk in small bowl, the pour into the dry ingredients. Add in shortening. Stir just till moist. (Batter will be lumpy.)Spoon into greased muffin pan, filling each about 2/3 full. Bake till golden. (Delicious served warm with jelly or possibly honey!)
