Ingredients

  • 1 1/2 lb Shrimp, cooked and deveined
  • 1 c. Julienne green pepper
  • 1/4 c. Capers
  • 2 x Garlic cloves
  • 3/4 c. Mayonnaise endive, sliced black olives and minced scallions for garnish
  • 6 x English muffins, split and roasted
  • 1/2 c. Minced red pepper
  • 1 tsp Dry tarragon
  • 1/2 tsp Grated lemon peel Bibb lettuce leaves

Directions

  1. In a bowl, combine shrimp and peppers. In food processor, combine capers, tarragon, garlic, and lemon peel. Puree till thick. Stir in mayonnaise.
  2. Pour mayonnaise mix over shrimp and peppers. Toss till mixed. Refrigerate1 to 2 hrs.
  3. To serve, top each muffin half with lettuce, then some shrimp mix.
  4. Garnish with endive, sliced black olives and minced scallions if you like.
