Ingredients
- 1 c. onions minced
- 1 x clove chopped
- 1 Tbsp. vegetable oil
- 1 lb grnd turkey
- 1 c. chicken broth
- 1/3 c. dijon mustard
- 1 Tbsp. chili pwdr
- 1/8 tsp cayenne
- 15 ounce cannelini beans, cooked liquid removed and rinsed
- 8 ounce corn liquid removed
Directions
- In Dutch oven or possibly stew pot, saute/fry onions and garlic in oil until tender. Add in turkey; cook until done. Drain off oil. Stir in broth, mustard, chili pwdr and cayenne. Heat to boilling; reduec heat. Stir in beans and corn; cook 5 min. Top with tortilla chips, cilantro and shredded cheese if you like,
- NOTES : This is GREAT! Proportions of meat, beans & corn are flexible.
