A super easy meal perfect for a cool fall or winter night.
Ingredients
- 2 15-oz cans white beans (I used cannellini)
- 32 oz chicken broth
- 1/2 cup water
- 1/2 cup chopped onion (from my freezer stash)
- 1 clove minced garlic
- 2 cups chopped cooked chicken breast
- 1 tsp ground cumin
- 1 tsp chili powder
- 1/4 cup chunky salsa, drained
Directions
- Combine all ingredients in a large pot. Cover and simmer for at least 30 minutes.
