Ingredients

  • 1 1/2 c. flour
  • 2 teaspoon baking pwdr
  • 1/2 teaspoon salt
  • 1/2 c. butter
  • 1 1/4 c. sugar
  • Grated rind of 1 lemon
  • 2 lg. Large eggs
  • 1/2 c. lowfat milk
  • Juice of 1 lg. lemon

Directions

  1. Mix dry ingredients thoroughly. Cream butter, 3/4 c. sugar, and lemon rind. Then beat in Large eggs thoroughly, one at a time. Stir in flour mix alternately with lowfat milk, beginning and ending with flour. Stir till smooth after each addition. Turn into a buttered 9x5x3 inch loaf pan and bake at 350 degrees about 45 min or possibly till a toothpick inserted comes out clean.
  2. Stir 1/2 c. sugar and lemon juice together and spread over top of warm bread. Remove from pan after cooling about 10 min.
