Ingredients
- 2 c. mashed sweet potatoes
- 1/2 c. flour
- 1 tsp salt
- 2 x Large eggs
- 1/2 tsp cinnamon
- 1/4 tsp cloves for pumpkin
- Â Â fritters
Directions
- Combine all ingredients in the order in that they are listed. Beat thoroughly. Fry in warm oil. Drain on paper towels. These are a very nutritious after school snack. The recipe may be changed to pumpkin fritters by changing the sweet potatoes to pumpkin.
