Directions

  1. In large mixer bowl put together whole wheat flour, yeast, sugar, oil and 1 tbsp salt. Add in 1 1/2 cups warm water and egg yolk. Beat at low speed for 1/2 minute. Beat 3 min at high speed. Stir in sufficient white flour to make a stiff dough. Knead 5-8 min. Let rise to double.Divide dough into 16 equal parts. Roll each piece into a rope 12 inches long. Place ropes on greased baking sheets, 2 inches apart. Add in 1 tbsp water to egg white. Beat till frothy. Brush egg mix over the dough and let rise 30 min. Brush again with egg mix, sprinkle with salt and Parmesan cheese if you like. Bake at 425 degrees for 12-15 min or possibly till brown.
