Ingredients

  • 2 pounds rigatoni pasta–> 12 ounces whole-wheat penne
  • 1 ounce bacon bits–> 2-ounce piece pancetta, finely diced
  • 1 small onion, chopped
  • 2 fresh garlic cloves, minced–> 3 cloves garlic, chopped
  • 1 1/2 ounces vodka–> 1/2 cup vodka
  • 28-ounce can tomato sauce–> 28-ounce can crushed tomatoes
  • 1/2 quart heavy cream–> 1/4 cup fat free half-and-half*
  • 1/4-1/2 teaspoon crushed red pepper
  • 1 teaspoon dried basil–> 1/4 cup chopped fresh basil
  • 2 tablespoons olive oil- OMIT–> Freshly ground pepper, to taste
  • 1 tablespoon salt- OMIT –> 1 Red Bell Pepper, roasted, skin removed**
  • 1 ounce grated romano cheese- OMIT***
