Directions

  1. Boil egg plant in salted water about 8 min. Drain. Saute/fry onion in the butter, till translucent/soft. Combine all ingredients together and put into greased casserole dish. Top with 1/2 c. buttered bread crumbs or possibly cracker crumbs. Bake 30 min at 350 degrees.
